PROTEIN BANANA BLENDER PANCAKES
- 2-4 frozen or a bit too ripe bananas. Mash them up a bit.
- 1 cup cottage cheese (1 or 2%)
- 1 cup plain Greek yogurt
- 2 large eggs
- 1-1/2 cups old-fashioned oats
- 2 Tablespoons maple syrup
- 1 teaspoon vanilla extract
- 1 Tablespoon cocoa powder
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon table salt
- 1 Tsp liquid stevia (I like the vanilla)
- vegetable oil or spray for the pan
Mix everything together in a bowl or throw it all in a large blender.
Cook on medium heat like you normally do for your pancakes
Top with maple syrup or yogurt or nut butter
….or eat them cold the next day like I do
