Creamy Pumpkin Baked Oats
Just in time for Fall, this is creamy, low sugar, high protein, packed with beta carotene, and is just simply a cozy treat as the leaves start to turn.
Just in time for Fall, this is creamy, low sugar, high protein, packed with beta carotene, and is just simply a cozy treat as the leaves start to turn.
1 egg or 1 TBSP egg substitute replacer
3 TBSP pumpkin puree
1 1/2 TSP pure maple syrup
1 Scoop vanilla protein powder
1/2 C milk or milk alternate
1/2 TSP baking powder
1/2 tsp cinnamon
1/2 tsp powdered cloves
1/4 tsp nutmeg
Throw all the ingredients into a blender or mix in a bowl for a more textured treat. Pour into a oil sprayed oven proof mug of small baking dish and bake for 20 minutes at 350 degrees.
*sprinkle on some chocolate chips for an extra treat
