Full of fibre, protein and healthy fats, this is a comfort food recipe for health!
INGREDIENTS
1 1/2 Cup Fresh or Frozen Strawberries or Raspberries or whatever berry you have on hand
1 Tablespoon Honey
2 Tablespoons Chia Seeds
1 1/2 Cup Whole Oats (organic and whole, not instant)
2 Tablespoons Chia Seeds
1/2 Cup Natural Peanut Butter (no sugar or other additives, just peanuts and salt)
1-2 Tsp Cinnamon
1/4 Cup unsalted dry roasted peanuts
1/4 Cup coconut flakes
INSTRUCTIONS
Blend the berries and honey, add a little bit of water if needed. Place in a container or bowl with the chia seeds and let soak for an hour or so.
Place oats in a bowl and cover with 3 C boiling water, leave overnight or for several hours to absorb.
Heat in the microwave or on the stovetop in the morning (sometimes I have this mid afternoon).
Stir in the cinnamon, peanuts and coconut flakes or save for a topping. Divide into bowls. Top with the “chia jam”.
